I do a colored pencil color wheel that my students seem to really like. We use a compass to draw the color wheel (keeping compass the same size draw first circle then point point of compass somewhere on first circle and draw 2nd circle, keep placing point of compass on the line intersections of last circle drawn and first circle drawn)
I teach students how to achieve different values and carefully layer colored pencil to blend colors. They choose how to ‘finish’ the background.
I don’t know why but my students really become engaged on this project

I did a wine and canvas-esque experience with my 8th graders. our school has a lot of canvases so each student got a small, 8x10, canvas and I played a video by The Art Sherpa on youtube. the kids had voted on which painting we created, I gave them 3 options. it took a few weeks but it was really fun and even those who didnt like pinting still enjoyed the experience.

After teaching my kids how to draw via Right Side Of the Brain ,each chose a character from Where the Wild Things Are and had to reimagine the figure in a new composition based on the posture of the character they chose. We talked foreground middle ground and background and created each layer then assembled :
