Cabo is two places--the town of San Jose del Cabo where it is more quaint and localish or Cabo san Lucas the cancun-esque party town.
If you want the nicest place - go JW or Solaz, if you want to party your face off and would like to be closer to the party town, Sheraton.
Personally I don't like the Sheraton, I think it's the least nice of the options, with the Westin second to the JW. Solaz opened in September. I haven't stayed there yet.
The Westin is all suites / apartments with kitchens and is newer than the Sheraton. But it's halfway between both towns so it's not convenient to either.
The JW is gorgeous, it's usually not crowded, has a lovely spa, and a Michelin restaurant, known to be the best in Cabo.
The ocean is almost always inaccessible from all these properties as the surf is too rough to swim, but you can walk the beach etc.
Go eat at Acre, Flora Farms, and Tamarind. Delish.

Mexico doesn’t have any Michelin rated restaurants
Look on bonvoy experiences / moments if there are opportunities to bid on in Cabo while you’re there. They have some cool stuff

Solaz is amazing.
Solaz for super luxury - Sheraton Hacienda Del Mar for very nice and very good bang for your points. Both are in good proximity to the downtown Cabo San Lucas area. Heard the JW Marriott is also very nice but not as close to downtown.
I am going in March. Booked the solaz
