Though I am not a full stack developer, still I feel like I could give you a insight on this. My domain is telecom and cloud computing is much needed for my profile too. In near future most of the IT projects will highly depend on cloud. So from hosting your application, for scaling purposes - everywhere you may find it. If you know, it will definitely add value to your profile.
Many firms do hire based on your skillset. You are not getting their calls due to the notice period constraints. These firms tend to hire people with <60days of notice. So, no need to be disappointed. A JD can have n number of skills mentioned under required but the interviewers generally look for what you know and how much you are sound technically. They will not ask something that you say u don't know and focus on the areas you know.
That being said, cloud is all over the industry now so upskilling on that a bit is always a welcome move.
