Is it wise to go to my company’s competitor for a promotion and risk burning a bridge?

For context, my small company was suddenly bought out by a large corp. I was about to get promoted to leadership but the new company doesn’t want to honor the title/salary increase we worked out. We only have one significant competitor in our industry, and it’s likely my best option. Love my company, been with them for years, but I’m really struggling with how frustrating this situation is.

For example, if I'm GS 9, receive a promotion to GS 11 at the end of probation, would i be able to apply to GS 13 roles if I'm qualified? Hello Belgium! Everyone happy with the salary bumps last year. For AD1/1 at KPMG there was a 6% bump. Don’t know about you guys? Inflation is double digits still so in January we’ll see another nice raise 🙏

I have observed that people on testing domain or frontend are getting better pay than other new tech domains like blockchain, cyber security, data sci etc(4-11yr exp) .
For less than 4 years experience new tech job gettig good pay but others getting very less.

In dev job Java, spring r etc getting better pay. Also some SAP consultant are also get paid high.
Is exp people in testing/frontend dev are less due to which they getting better pay than others with experience.

I hold an offer of 18LPA from KPMG with joining date of 7th September. (Wfh)
I applied at Workday on 15th May and went through 7 technical rounds of interview and received a verbal offer letter of 21LPA (hybrid)
Now apparently their technical panel "forgot" about the interview and wants to have a discussion again as 8th technical interview. HR says their joining date will be 19th September.
