I have a fast metabolism, 6ft2inch, 170 pounds, need to eat 3k calories to maintain my weight. It's difficult trying to eat healthy and maintain my weight.
Try using an online TDEE calculator to estimate your daily calorie needs given your current goals. It won’t be a perfect estimate because how many calories you need per day also depends on how much muscle you have (increases calorie burn at rest) in addition to height / weight / activity level / whether you’re looking to lose fat or maintain weight. Your needs are individual to you, so there is no amount one is “supposed to” generally consume given height / weight.
I’m a 5’3” F and typically consume 2,000 cals per day at maintenance but I also am active and lift frequently so have more muscle mass. For me I would consider 1800 cals to be a deficit.

At 5’4 you do not need that much. You’re used to it so it feels normal but if you changed your eating habits I bet you could get adapted to 1600-1800 really quick.
Their height and a blank statement of how many calories they need a day make absolutely no sense. It all depends on their lifestyle & body composition. OP didn't indicate if they are gaining weight at 2000 calories - that could easily be their maintenance.
I am 5'4 and my maintenance is 2000 calories. I do straight training and run.
I’d try bulking your food up more in the morning and then experimenting from there.
As the same height, I eat about 1600-1700 per day and I eat high fiber foods in the morning and a higher quantity then. That keeps me full until about 1PM. Then I eat a small lunch (no sides, etc.) and a snack for dinner (eg: Greek yogurt or fruit).

I actually often underconsume calories. I estimate maintenance calories are around 2200-2300 and some days I only eat around 2000. I work out a lot but my weight stayed pretty much the same for last 6 months. I think I have body recomposition going on but it is slow. My body fat percent is already pretty low. I try adding snacks for additional calories.
1600 seems very low if you are an active person.
