I keep all my travel ideas in a spreadsheet for easy recall later. Just 3 selections from that:
1) Bariloche, Argentina, gateway to Patagonia
2) Taal Lake in The Philippines, it has pink jellyfish that you can swim with because they evolved without stingers
3) Winslow, Arizona, they have a statue on the corner in honor of the Eagles song, and it's a good launching point for The Grand Canyon

If I had someone to go with, I would do Spain. If I had to travel alone I would do either Thailand or Australia.

Since you've only got a week, I would stick with travel in North/Central America, otherwise you're spending a high proportion of your trip flying /recovering from jet lag. St. Regis in Puerto Rico or Punt Mita are both excellent places to spend SPG points. Stay 5 nights to get the best point value.
