I agree with shifting to quarterly… Frame it as, “we have a great rhythm now and I’ve learned a lot from you, I want to be able to track issues and questions over time and I think I can best do that quarter over quarter. This will also give us time to really dig in on substantial topics. What do you think? “

Actually try and build a genuine friendship / relationship instead of this being so transactional.
Your goal is to have this mentorship outlast your time at the firm.

Change the frequency to quarterly. Every month is too much unless you have set specific goals that you would like to track with your mentor.
Long term career activities don’t progress significantly every month. If quarterly is too far then do every other month.

If you are using chatgpt to figure out what to do with your mentor, you don’t understand what mentorship is all about. It’s like Luke Skywalker had no idea what yoda was all about (well at first he didn’t, but you get the point)
It is a forced mentorship relationship, so I have to continue to have these meetings but am running out of questions and topics to discuss. How do you suggest I use my mentor?

Her projects, my projects, how performance reviews work, other questions about the firm. I'm in industry now, not consulting. She and my skip report to the same manager. She has worked here her entire career
