From Plat, you can product change to any other charge cards at anytime, including Gold and Green. AF will be prorated and refunded (new AF will also be prorated and charged). To cancel and get a full refund of AF, you must cancel it within 30 days after AF is posted.
However, if you never have Gold or Green, I would suggest applying for them separately and getting the SUB. Once you product change to those, you'll no longer be eligible for SUB on those cards per "lifetime" (more like 7 years after card closure).

Echoing the comment above. Amex cards are charge cards, not credit cards and don’t necessarily negatively harm your credit score upon closure (except for age of account calc). Since that’s the case, you’d actually be better off applying for the gold 1 month prior to cancelling your platinum. You’ll retain the points and get the benefit of the 2nd SUB

Nope, it’s SUB per card! I have both gold and plat and very much got both.
You can keep plat earned points IF you open the gold before you close the plat. There has to be overlap. Otherwise you’d risk forfeiting the points.
Average age of credit is used in some score calcs. Some firms use it more whereas others don’t. Not a huge concern for most people if utilization is low and available credit is fairly high
