Always Chase. You have to play to the 5/24 rule.

Either of those would be fine. I prefer the chase ecosystem but that’s purely from experience.
I used to have CSR and AMEX Platinum. I dropped down to the CSP (which has a 90k signup bonus now, higher than CSR) and kept the AMEX Platinum when Chase raised the annual fee on the CSR. AMEX credits (FHR, Uber, etc) cover the fee, the status that comes with platinum is useful (Hilton Gold, National Emerald Executive, and Hertz President’s Circle), AMEX has better lounge access (AMEX Centurion lounges plus Delta SkyClubs in addition to the priority pass lounges that come with CSR), and FHR is valuable (though you can get much of that from a Virtuoso travel agent)

Depends on your needs and redemption style.
CSR is a good starting point since it has good transfer partners and great earning potential (3x on dining and travel). Floor redemption is decent (1.5 cpp) and the travel credit is absurdly easy to maximize (though the Annual Fee is getting higher and higher which sucks).
Venture X has an appealing annual fee but a harder to use travel credit and limited earning potential (travel portals are generally a bad way to go when avoidable). It’s actually best as an everyday card for 2x on all spend that can then be transferred to a decent list of options. Floor here is 1cpp so definitely would not go this route if you want an easy, cash driven redemption.

You have to wait 48 months between Sapphire bonuses.
