Basic things: hipaa, cross-border data transfers and Schrems II, virginia's new law, california's CCPA and CPRA, changes to COPPA for minors, Illinois' BIPA (biometrics), changes to Apple's tracking cookies (IDFA) and, while not new, GDPR.
Understand what a privacy policy is (and read a few of your fave tech companies'), a DCMA takedown policy, right to deletion/be forgotten.
Privacy loves acronyms.
You can read law firm alerts on all of these at Lexology or JDSupra. Goodwin, Fenwick, DavisWrightTremaine have good alerts. Follow Victoria Beckman of Microsoft and Odia Kagan of Fox Rothschild on LinkedIn--they post great updates on very timely privacy topics.
Look at other law firm job descriptions for privacy and parrot back bullets as things you're excited to delve into.
If you took contract drafting in law school, emphasize that plus client counseling plus fondness for new/emerging areas of law.

You could explain how your litigation work has prepared you to give litigation avoidance advice for a counseling esque role. Otherwise I would scroll through IAPP to figure out what are the hot privacy issues right now
