What makes you think big meetings and client interactions are interesting?
Gotcha. In which case I think you don’t have to wait until you’re partner. Make yourself indispensable to one partner and all of her cases. The more comfortable she is with your work product, the sooner you will get to move on from only research/writing.
If you go in-house you get to experience the joy of nonstop meetings!
I don’t think these are exclusive to being a partner. Get to be the go-to person on your files and you’ll get more client interaction and participation as a result.
That said, as a partner I still spend a lot of time with my ass in a chair. Sure I am making more decisions rather than just implementing, but I spent a LOT of time on calls and sending emails. Big meetings are not every day or even every week.
Yeah, having clients means you have choice which I think brings some happiness.

At the end of the day, practicing law in a firm is inherently boring. You’re billing hours for your firm to sell. You can find certain tasks enjoyable or challenging (or stressful), but at the end of the day you’re letting that clock run while you do [XYZ] so your firm can sell the amount of time you spent.
What is your practice area? I found my days to be a lot more varied, and with not nearly as much ass-in-chair-time, when I shifted my practice to white collar and investigations work.
