You mainly lose weight from your diet. I find it hard to actually diet so find intermittent fasting works well for me (ie skipping a meal like breakfast). You should also just try go for long walks of exercise is hurting your knees - cardio is good for weight loss.

Can I ask how much weight you've gained in what length of time? I'm only asking to try to see if the issue stems from being sedentary too long vs weight gain, and if you might need to see a PT. You being in your 20s, it would be difficult for your knees to get affected quite this much! So it could be worth getting them looked at
Watch what you eat and then go swim or elliptical as they are better for your knees than running.
Curious.. What activity are you trying to do with your knees? It seems like you are putting pressure on them that’s causing pain.
When you say: “bend knees” does sitting count?
I would recommend stretching first before any exercise. But definitely consult with a physician.

Different people wear out their knees at different rates. Your weight might just be aggravating it. So look into activities you shouldn’t do if you have bad knees (sometimes it’s stuff like trampolines, climbing too many stairs, avoiding running, etc) and avoid those for a few weeks. If the pain still persists, you should go to a doctor because you may have something else going on.
It’s a common myth that your knees “go bad” when you’re old. Genetically or if you did a lot of high impact activity at some point, it catches up with you. Just a thought.
Also be kind to yourself about the weight gain... the world is on fire. Great you want to be healthier and good luck with the journey! But definitely do it from a health perspective because that’s the only way you sustain it

Basics of losing weight is a net calorie deficit
Burn more than you eat
What you burn is your burn rate if you did nothing all + burn from exercise.
So try to consume less calories (start with manageable changes) and increase your activity levels.
If you can, measure:
Food consumption (food diary, calorie tracker of some kind, etc)
Exercise eg - how many days a week are you getting at least one hour of exercise in
Water consumption
Sleep
Weight - aim to lose about 1-2.5 lbs a week — Anything more is not sustainable.
