I would wait until it’s all signed. Nothing is for sure until then. After that, tell company B that you were grateful for the opportunity but thank you got another offer and you took it.
Don’t say anything until you’ve signed.
Depends if you would also take the other job. If you have two offers you can play them off each other to get a higher salary, but you need to be willing to take both jobs. You won’t be able to do it if you sign the offer of the first company. You can tell them you need a few days to think about it or you can say you’re going through your process and still have a few interviews to finish before accepting any offers.
Depends on how far from the end you are in the process with the other company? I would personally wait until you have the offer in writing to potentially say something. The other question is also about your preference. Which role is your preference because this question can also help you to define the best path.
If both jobs are equal in your preference, I’d tell company A that you’d like some time to think about it and talk with your family/partner/etc. then, hopefully in that time, company B will get back to you. If company B doesn’t get back to you with an offer, and you feel the pressure of the clock coming from company A, then you can let company B know that you’re entertaining another offer and if they don’t plan on making you one soon, you’re going to take the offer from company A.

Where would you rather work? If you’d prefer the other place, you can try and use the offer as leverage. It’s always a little risky, but worst case you end up with the offer you already have...
