Though it is certainly echelons beyond the scope of elementary math, it might be beneficial to examine the college boards CED for Calculus.
The level of rigor and detail in AP Calculus is a pretty good benchmark for STEM higher Ed.
It painstakingly lays out what kids need to know to pass university calculus, which for the majority of STEM majors is the "cut course" or filter course.
More than anything, you will notice less of the mechanics of Calculus, and more conceptual understanding. Students will spend way more time, explaining, justifying and interpreting as opposed to calculating.
Calculus, sometimes incorrectly, is considered the capstone of a quality education in secondary mathematics.
Why not begin with the end in mind?
I think much of the fear comes from not enough preparation in math education. Most early childhood and elementary teachers get only one math methods course. It’s not enough to feel secure and then most inservice PD is focused on literacy.
