As far as the good ones like Sony XM’s or Bose QC’s They all aren’t reliable enough for me with windows drivers to trust them at work. I’ve had them work flawlessly some days and constantly disconnect / not be recognized by my PC others.

I have Sony WH-1000XM4 and it's absolutely perfect.
The older model didn't have the best microphone.
But this one does.

I've been very happy with my Bose noise cancelling headphones, can't remember the model but they're the ones that retail for around 300 bucks.
Go to https://www.rtings.com/headphones and look into the gaming headphones section, they are more comfortable, better quality than business headphones and also have great mic quality.
If just for calls, etc. I’ve used these for about 5 years now with little to no issues:

Bose 700 with UC dongle. Flawless integration with windows as the dongle is paired to the headphones directly, not the laptop. 5 months of zero issues.

I had chrome book for a while (gross, I know) and that didn’t go well with AirPods either.
All mainstream Bluetooth noise cancelling headphones do okay in calls... because that's not what they are designed to do. Get one specifically made for call with a good mic. It will make all the difference
Look up the call quality tests on YouTube. It's does fine...for ANC headphones. Not best in class compared with other headphones made specifically for calls

I am in the market for a great pair of headphones for music as well as calls. Considering either Airpods Pro Max or Sony WH-1000XM4. Can anyone chime on which ones should I go with? Price does not matter. So don’t say that sony ones are cheaper and worth the money
