Is carbon steel supposed to look like this? I’ve seasoned, reseasoned, wash with mild soap and water, dry it over the stove, avoid cooking acidic foods in it and it still looks like this. It used to be way blotchy before but it has gotten darker on the bottom and has gradually moved its way up.

I don’t know if I’m doing it right. I’m used to the black patina of cast iron.

Good tutorial on carbon steel wok and seasoning over at Woks of Life. Agree it doesn’t look normal, but maybe reading it you can identify where things went wrong.

I checked with a cooking forum and they said it’s normal. It will darken over time but will never look perfect. I thought I ruined it but I didn’t. I just got it a couple months ago.

Our wok took a good 10 years to build up the black carbon look. We tried speeding it up and oiling and heating in the oven but found the only way was to cook in it.

My pie day pie (belated!) Ina Garten’s chocolate banana cream recipe. My first time ever making a pudding. I have to say it was amazing to go from muttering “oh shit” for a solid 20 minutes of mixing the eggs/milk too aggressively into a foam and finally seeing it condense into pudding. My parents are visiting this week and mom and I made dinner tonight. Salmon is seasoned with Trader Joe’s ajika (a Georgian spice blend) and we just roasted the broccoli. The standout is the mejadara. It’s spiced rice and lentils with fried onions and is popular throughout the Middle East. We used the recipe from Yotam Ottolenghi and Sami Tamimi’s cookbook, Jerusalem.
