Got a random email from a supposed Amazon recruiter for a SDE position (which is not at all a fit). The email is amazon.com domain and there are no red flags in the body but it doesn't feel like an Amazon recruiter due to the tacky signature, etc. Has anyone seen this kind of cold-calling from FAANG recruiter?

I think technically it would depend on the laws in the state that you are in. But usually they will tell you that it is being recorded for courtesy sake.
When I was in college I worked part time in a call center, and I can confirm ACC's comment (thought also not giving legal advice, just sharing, my personal experience). When we had to make outbound calls or a new person joined a call, we had to state the call was being recorded and then if that person stayed on the call then we did consider that their consent to be recorded. I imagine video calls probably aren't much different from phone calls in that way.
I am the interviewer a lot. HR has told me to not record my interviews. I never asked why but I personally would not want to be recorded during an interview.
It's becoming common that people hit record on a Zoom call. I'm not even sure they're thinking about ethics or laws at this point. I just assume everything is recorded at this point.
That is true. I did have a meeting recently where I asked if she knew it was recording and she had meant to stop the recording. It could be that it was an accident.
Yes, of course, it is illegal. You should ask for permission at the begging of the interview. How would you feel if one of your candidates had recorded you without asking your permission?
