Your title is your title, and that’s the position that a background check would be verifying. So I wouldn’t lie.
Your experience can be highlighted through your tenure and promotions.

The important part isn't so much the title as it is what you did. Example, if you are a technical project manager in strategy as a sr analyst that is a much higher position that consultant at client services in operations
The head of whatever AI consulting subset at EY is a senior consultant and that whole team of senior consultants have been running around SXSW like they’re partners. It’s all in your public persona. Make it up and own it.
Absolutely do not lie about your current title. That could be grounds for termination if you ended up being hired. It’s true there is a bit of mismatch with leveling across the big 4. I made a move from being a Senior Consultant at EY to a consultant at Deloitte - to be honest that was a bit of an ego blow at the time, but it was explained to me that because of tenure and leveling a C role was a better fit for me than an SC role at Deloitte. The move ultimately came with a good pay increase and more responsibilities, so this was indeed the better path for me.
Any recruiter will review carefully a person with a C level role applying to an SC role, but given that EY typically expects SCs to have minimally 2-3 years of experience, you should be fine from a tenure perspective. You need to review the job details and responsibilities and make sure your resume and applications appropriately match what they are looking for.
Are you showing your job title progression on your resume, or are you only showing your most recent title?
Depends on how the firm recognizes your role. Accenture used Senior Partner, partner, Sr Mgr, Mgr, Consultant, Specialist . My opinion is that your title may not always represent your expertise and experience. Treat the each role as a learning experience.
C at Deloitte is just like C anywhere else. Titles really align fairly well along with responsibilities. Thats just something that deloitte people tell each other to feel superior. No horse on this one. Not on big4 anymore and not planning on going back, bust lasted 12 years in big4 consulting across firms.
I would put whatever you think is appropriate on your resume. But in any kind of official docs put your actual title. Consultant title are kind of nonsensical at a lot of places and your resume is intended to let people know what you actually do. I’m speaking as someone on the tech side so you should take that into account.
