Since the industry is small and everyone knows each other, how do you navigate leaving a place when your old manager knows your new manager?

I currently work as a GM and Operations manager for a family owned Restaurant chain in Denver, CO. I run four Restaurants, and two Coffee shops for the owner. I opened four of these businesses since January 2021. My salary is 73k. I feel very underpaid and very overworked to the point of burnout. I’m wondering what “fair compensation” might be.
