If you've chatted multiple times, it's not that critical after every call unless it's to follow up on something. After first call, for sure!
^BCG, it's been our second point of contact in the case I'm debating sending, but it wouldn't ever come across as annoying would it? If it's just the 2-3 point of contact?
Most follow up emails seem forced to me. I feel like it's a dated thing at this point

@OP you're fine - don't worry about a follow up unless you were asked to. Feel free to keep in touch with the person but don't force anything. We are humans too :)
Yes - definitely send long detailed thank you notes (or, even better, more than one!) with bullet points that outline the magnitude of your gratitude. Grovel if you must.

Thanks EY1. To be clear, this is following up after a phone call even if it's the 3rd one you've had with this person, and each conversation being at least 30 minutes long, yeah? I just thought at this point we have the rapport to get away from the formalized stuff all undergrads use

Just something short and on the point will do. If you want to ask him/her for something else (such as another contact), do so too
