Roasted Garlic Lemon Thyme Chicken
This recipe never fails.
Whole chicken
2 Heads of Garlic, halved
1 onion peeled and roughly chopped
2 lemons
Thyme
Parsley
Butter
Salt
Pepper
1. Preheat oven 425F
2. Season cavity of chicken with salt and pepper
3. Stuff cavity with quarters of 1 lemon, halves of 1 garlic head, sprigs of thyme and parsley.
4. Brush the whole chicken with melted butter, season with salt and pepper.
5. Tuck in wing tips and truss drumstick legs together. Place garlic, onion, lemon, and thyme around the chicken.
6. Roast in oven for 1.5 hrs.
6. Remove from oven, place bird on cutting board and cover with foil for 30 minutes.
7. Make gravy from the pan drippings.
8. Slice chicken and serve.
