Often it’s a senior position where you act as their proxy. Just make sure the person has an executive assistant already.
CoS could mean administrative deputy, cat herder, person who keeps more important person organized, glorified EA. Depending on the person you might have a voice in decision-making but typically responsible for seeing that staff execute / applying those decisions.
I would love that job. Our segment leader has one and it is as A1 describes. Our dude’s CoS is def at decision table and exposed to a ton.
To add to the above, I would also make sure you like the ceo and he/she has a career ahead of them that they can pull you along for
Chief of Staff is one of the roles I'd consider leaving for (obviously dependent on who it is to), there's a strong overlap with consulting skills. Would be an easy role to do well in.

The role is CoS for a recently appointed CEO of a decent sized company. SM called me bc, back in our consulting days, he and I essentially ran the office of a CEO of a global player (in same industry). I'd never imagined my career going this way - just thought I'd stay in consulting. But I honestly don't know what to do or think right now so just trying to figure it out...
Sounds like my dream Job.

That role is working 12 hour days why would you leave consulting for that in industry? What would your exit opportunity be as a chief of staff title?
