Gifted teacher here..sorry for the semi-long post, but this is a nuanced question.
The two most researched methods of differentiating for gifted students is acceleration and curriculum compacting. Let them challenge themselves! It’s important for gifted learners to be challenged, so they can stay motivated and learn how to overcome adversity.
You can have them do projects that apply the content to real-world situations/scenarios.
What you don’t want to do is simply have them be the teacher or have them serve as a tutor. While that helps others, it does not meet the needs of the gifted learner. It may also make them feel different from their peers—causing them to stop applying themselves.
What is important with gifted learners is building intrinsic motivation! Letting them know that it’s ok to make mistakes and praising them for their successes NOT for being intelligent (example: “you did such a great job on that essay” is praising their output...
“you are so smart” is praising their intelligence. The problem with praising their intelligence is they associate their intelligence with their sense of self...so when they reach a level where they do have to apply themselves, they don’t know how to face the adversity...then they avoid situations that may cause them to fail. In these situations, the gifted learner suppresses creativity and does not meet his/her potential.)

If you are looking for an enrichment project, my students love choice menus. You can find many premade ones or make your own. They can be instructed to complete a certain number or complete the board like a bingo board. I totally agree about the tutoring. Please don’t use them as a tutor or to help other students all the time!
