GSM blends. You want something with syrah for that rich texture. Perhaps a malbec.
Not a lot of GSM in Santa Ynez, that’s more a Paso thing. Santa Ynez is mostly Pinot noir (thanks Sideways). Bigger reds will be mostly at the eastern end of the valley. I highly recommend everything from Hitching Post (and you *must* get a steak and grilled artichoke to go with it), especially the Four Top which is one of the best valued wines anywhere IMHO. The Volpino from Foxen is another really interesting red in the area.
For a great red-style white, try the oak-aged Chardonnay at Foley.
I basically drink 3 reds. Guigal Cotes du Rhône, good Zinfandel’s and Cabs from Napa. There are some expectations but that covers it. Mostly I get them from wine clubs. In the store I generally won’t touch a Zin under $30 and Cans under $45.

Tablas Creek Grenache is a gem. I drink lots of reds heavy on the black fruit, all year. Where you can find single varietals of Petit Verdot, try it out

The Biltmore has a Christmas blend. It’s a little sweet, but it has all the flavors and spices I associate with the season.
