“I see there’s a generous holiday schedule—do you find yourself being able to actually take that time off?” When I interview candidates I proactively talk about the work/life balance and my experience so they don’t have to ask, though in the case of my team, it’s because it’s genuinely something we are proud of.

Agreed, that's a symptom that work is well balanced and the company is organized (or people are slacking). It could also mean that a "rebalance" is behind the corner, so it can be a double edged sword!
Depends on if you have multiple options in terms of job prospects to ask that question

What kind of responses do you get? I always refrain from asking such questions
I’d just come out and ask—I don’t think there’s anything wrong with that. If you applied for a full-time role, you can simply ask, “Is this a 40-hour-per-week position?” Are you worried they might expect more than 40 hours?
