Frued would say you have an oral fixation from nit being breast fed as a child.....
I have the same problem, its likely just general anxiety manifesting as an oral fixation (for me thats chewing pens, my nails, etc). My therapist says meds will help, but likely become a habit that requires both focus to quit, and mindfulness techniques to quit without finding a replacement
It's all about identifying cue>routine>reward. When you catch yourself biting, think about/jot down what happened just prior to that, and what it is that biting does for you. It's hard to identify the reward here, but once you figure out what exactly biting does for you, you can replace it with a better substitute. It could be just an oral fixation response to stress, in which you can try popping a piece of gum or biting a toothpick when stress arises . Or deeper, it could be a need for control, in which you get up and take a short break in which you decided where to walk to. Best solution however, is to reduce the source cue, which is stress. (Mindfulness apps, taking more time for yourself and a little step back are good ways to start)

Well, not to the nub, but I find myself just chewing away

I’m an on and off again nail biter- just try to make yourself cognizant of it. Also, read up on the hair pulling/self harm anxiety disorder - you will see that nail biting is like a gateway drug to that. 😳
