The most obvious answer is because in industry there's a profit motive and revenue is, in theory, infinite. So salaries can be much higher than would be the case in research. People will justify staying for various reasons, sometimes it's altruism, they want to be involved on the cutting edge of science. Some of them like the intellectual freedom, they can follow their instincts and aren't concerned about bringing a product to market.
I’d think budgets are tighter in research, especially academic research. For profit companies have more money to spend on salaries
Main thing is benefits or just working with good people and a good purpose. Not saying corporate is bad but less motivating to get out of bed
