Is it okay to reject the accepted offers, 2 months before joining ?

[Question] If you resign, and you have people directly reporting to you, when is the right time to tell them you have resigned? immediately? a few days/weeks into your notice period or a few days/weeks before your last day ?

I have offer from Hitachi and Tech M pay is almost the same for data engineer role.

YOE: 8 Years
Technology : AWS (DWH)

I have cleared Tech M client round and sure on the project and role details.
But Hitachi has not confirmed on the project details and said I'll get to know once I'm onboarded.

I have below doubts reg Hitachi before making a decision

will I be tagged to project with my current skill set or to any other cloud ?

In Capgemini, Some of my clearances are auto cleared and some are still pending. I have my last working day on Dec. first week.

I have got offer from Accenture for 20LPA with 16LPA fixed and 4LPA as variable pay.
Now Capgemini wants to retain me and they have told they can give counter offer for 16-16.5 LPA though I asked for 17.5 LPA as fixed what should I do now accept and revoke resignation?
My years of experience is 8.
