Interview. Interviewing cannot hurt. If you get an offer, then you have a decision to make.
Do the interview, keep up with the recruiter through your on boarding process at the less than ideal job. If you get the Google offer, accept and prepare a thoughtful explanation to the job. If the offer doesn't come through (very possible in this environment), you have your backup
Don't worry about reneging until you get an offer you like. Statistically, most interviewees don't get an offer, so more likely than not, you're wasting your time.

What do you mean by at-will? A contract?

Ah, gotcha. Employment in US generally falls under some form of at-will unless you're a government employee or a union member. If this isn't in the US, just disregard :-)
