Sous Vide first then pan sear
Blot anything completely dry before searing, otherwise you’ll recook it.
Check out Sous Vide Everything on YouTube. They have great recipes.
Also try other things than meat - mashed potatoes are really fantastic sous vide. You can make cheese in it too. Really cool stuff.
Yessssss - I got a vacuum sealer and it has changed my life. I also got a blow torch which has been great for searing. Love making everything in it but my faves have been sea bass, steaks of course, and pork belly for meats. Love making sous vide egg bites like Starbucks has (mine are better), almost any type of veg. Definitely get good recipes from Anova Culinary and Lifehacker has a pretty good ‘will it sous vide’ corner that is pretty helpful also.
