I wouldn't necessarily say that I hated them, but I definitely always saw them as something I "had" to get through instead of something appetizing in its own right. Once I learned how to cook and learned how to make them the way that I liked it, that changed the game. I never would've touched a brussel sprout in my early 20s, but now it's one of my favorite sides.
I was really only interested in eating vegetables like carrots, cucumbers, or peppers when I was younger. I think that the classic vegetables that kids hate like broccoli, brussels sprouts, and really anything else that was green took me until I was older to really life and give them a try.
I was never really opposed to vegetables, but I never really thought about them much, they were just there on the plate. What gave me an appreciation for them was as an adult I got into gardening and began to appreciate different varieties of vegetables. And, of course, if you grow your own it's just gratifying.
I’ve always liked vegetables but something happened when I hit 27 where I literally crave certain veggies like roasted broccoli or sweet potato. My body also starts to crave beans if I haven’t had them in over two weeks.
Had nothing to do with veggies as a kid. That really changed when I started roasting them! I will say once I started trying to eat a little better and more varied, I really do crave a lot of different things now. Absolutely still need my sweet treats but really do want some roasted broccoli too!
