You can't opt out of L&G without losing ACN contribution, but you are welcome to make your own private pension contributions. I'm not sure ACN will help you pay automatically though, you'll just have to pay in and the claim the tax back on your self assessment.
Salary sacrifice isn't the scheme we operate btw. That is a specific arrangement to save on Employee and Employer NI. We have a Net Pay arrangement.
Sal sac is often used as an idiom for net pay though to be fair...

You can do both - contribute minimum % to ACN (as it has no bearing on ACN contribution) and then do your own SIPP on the side.
I have made a partial transfer from L&G into a SIPP - this seemed to be the only way to do it without losing the benefits of the ongoing contribution and I don’t think you can do ongoing transfers.
Be warned it’s a painful process and takes months to execute
Potentially - I did mine through Hargreaves Lansdown and they didn’t really give that as an option
I did this recently. What I did was a full transfer from L&G > Interactive Investor SIPP. It closed my L&G policy, which was a pain to set back up again. Not sure if it’s possible to transfer smaller amounts.
There’s a fair bit of paperwork required to complete a SIPP transfer too
