Being in EY for 4 years and under 3 different teams, I think i can answer this well
1. View of EY India: You rightly said it really depends upon the partner and his close group to set the culture, promotions, etc. There is no proper system to gauge your capability which is followed, so your visibility and image is the only way to get good hike and promotions. Moreover, there are few teams where wlb is hell, they work from 10 in the morning to 11-12 till night, make you come to office without any reason, expect you to deliver on very tight timelines, understaff the projects improve profitability, etc. But then there are also teams which operate very professionally and teams which are in between.
2. Projects: This is a hit or miss, most of the time there is no method of doing things it completely depends upon the engagement manager on how it should be, which mean that even the same project in a team might be done differently. Which is so ironically, especially how EY pitches methods and accelerators. Also, lately there are no projects so most of the people are on bench.
3. Perks: a. Above manager level you can lease a car, other than that b. you get travel reimbursements which are hardly monitored so you can have fun (this also very team dependent) then c. Learnings, Udemy is free and you can reimburse most of the certifications with a 1 year bond.
4. Annual hike and bonus: Hike is generally good there has been bad years but mostly its ~12% for decent employees. Bonus is also around 12-18%
5. Job security: I have never seen anyone put in pip or fired at senior or manager level or below. At SM, Director and Partner level its a different game since you are expected to bring business and you might have some hard kpis. But anyway i am a consultant so i wouldn't know that.
Overall its good, considering you want to do consulting and are figuring it out. If you are a seasoned ITES employee, you'll most likely not like it here because of the lack of processes.
A. Absolutely, I believe if i am satisfied with the salary, projects and team then there's no need to leave. I personally grew a lot from a career pov at EY.
B. I'd say show some resistance and other offers very near to your joining date. Also check the salary range first because HRs here are very stringent on pay parity issue, they won't even listen to the partner sometimes.
Wlb is good.mostly depends on client
Hike 7 to 15 percentage
Perk nothing
Bonus 8 to 15 percentage of package
No leave encashment or carry forward
One more good thing that I can think of is the medical policy. It's better than most, and the coverage is also better.
I think the HR and management have taken over the fish bowl to save it from all the negative reviews. Probably hiring has started becoming difficult.

EY was my first job. I left last year after 1 year. My partner and managers were bullshit. Very very toxic culture tbh.
Within EY, there are 4 divisions, and iam in the Technology consulting space. You are contracted to a client, so WLB is driven by the client. If it is a US based firm, they respect your shift timings. Personally, my client is a top US bank, and WLB is very good.
If you are in Audit, i guess things might be bad during tax filing months.
Financial services is within the Tech consulting space.
