Limerick, Ireland, is great. Also love Cadaques in Spain, a little fishing town north of Barcelona. Aix-en-Provence in the south of France is a worthy spot too.
My favorite town in all of Europe is Gdańsk in Poland, but last time I was in Poland (2007-2008), they didn’t have the best reputation for being LGBT friendly, and I can’t tell if this has gotten better or worse (I’ve heard news both ways)

Sitges, Spain. It’s 45 minutes from Barcelona and so friendly / fun. For a splurge, I would boat over to Cadaques for a few nights.
What about a Spanish Basque / French Basque trip full of great food? Bilbao/Bayonne etc.

We got some of this vibe in 2019 in Algarve (beaches, warm), Switzerland (Lauterbrunnen), and Puglia Italy (coastal towns, Ostuni, Lecce)

I lived in Aosta, Italy for a couple months right before the pandemic and it might fit the bill! It’s a super cute town in the Alps in northwest Italy. There are a couple days worth of things to do in Aosta itself, and you can take the train or rent a car and explore the region (gorgeous mountains! 80+ medieval forts and castles! delicious food and wine! driving distance to Switzerland and France!) There’s also a local ski mountain, Pila, with a gondola that leaves from downtown so you don’t have to drive up (which was the reason I chose to live there) - think you can hike/bike there in the fall.
That said, it’s a good bit smaller than many of the other places mentioned here (~30-40k people in town, ~125k people in the surrounding areas) so if you’re looking for more of a nightlife and a lot of tourist activities, may not be the place!
I was going to suggest Courmayeur here for the same reasons. Spent a winter break there ages ago, it's a cute/walkable town, maybe too small for what OP is describing...

Torremolinos in southern Spain has great views of the Med and is one the main British gay hotspots in southern Spain. I went with my wife and it was solid for r&r. If you are looking for activities, you’ll have to rent a car and drive though.
