Bonvoy - get yourself a hotel.
Check United award availability but also compare to award availability offered by other star alliance airlines. You can use United points to book an available award flight on say Lufthansa for example (just find the flight on Lufthansa/etc with award seats open then call United directly to book).
Ultimate rewards (& I think amex) can be transferred 1:1 to United to top off your points value if need be (don't book through Chase's rewards booking system cause you get horrible value)
Depends on how much of each you have. If you're looking at honeymoon. Roundtrip in business class would be like 320k United miles for 2 people.
For marriott, if you're using points, make sure you're staying at least 5 nights as it's pay 4 nights and 5th is free
Are you looking to fly biz class? The easiest options are probably FlyingBlue, Virgin, or British Airways. All are transfer partners of Amex, CSR and Bonvoy. It will cost you around 100K points per person round trip. I just booked two RT to Paris for less than 100K on Flyingblue; there was a lot of availability.
Another option is to book star alliance flights via Aeroplan, which is an Amex and Bonvoy partner. I believe you can also find extremely cheap RT flights via ANA (Amex and Bonvoy partner), but you have to do a lot of searching and be flexible with dates.
