We do two rooms typically. Or pay cash for a larger room/ suite
Depends on age of family members. 2 rooms that connect with a door between if teenagers and up. If 2 adults and 3 small kids, my family did one room with at a pull out couch and either a king or two queen beds. I loved sleeping on the pull out couch with my siblings when we were young.
For one night, 5 of us will pile into one room with two double beds. My kids once fought over who got to sleep in the closet, now a fond vacation memory. Longer than a night, two adjacent rooms should do it.
We (family of five) always book two and even sometimes three if the rooms are small and my husband’s snoring has been particularly bad recently.

5 people with one bathroom would be hard.
We were 6 and it'd be 1 room while two of us slept on the floor/sofabed. I thought that was normal for the longest time until college :" lol
