This is a very open question. In house IT is very different from core consulting
I agree with your point.
However, I was implementing business processes in SAP as a function consultant when I was part of Deloitte. Even after moving to In-house IT at same client, doing the same thing in addition to more responsibilities.
Still I am feeling that I am doing same Consulting work.
Use a career coach, specialize your CV and prep case studies.
Go for it, nothing ventured nothing gained
It’s hard to say if “the consider such experience “ until you apply and get interviewed. If you get an offer, it means they consider your experience. It’s always case by case. MBB is diverse and hard to have an answer to such question.
Probably BCG Platinion, maybe GAMMA would suit better. It’s not easy, from there you could later jump to core consulting team.

I will check for related roles in BCG too. I am a process expert of Healthcare Industry and In past has worked extensively in FMCG company too.
