I am teaching "on-level" 10th grade and, hoooo boy, the mental bandwidth is just not there. Think of it this way: If the student had shown any promise, he/she would have been tracked into advanced-level English. You're teaching the bottom of the barrel at this point. There may be one or two exceptions, but if you do some digging, you'll probably find that those exceptions are new to the district or are simply too busy with their other advanced classes and wanted an easier class where they could coast.
To answer your actual question, just make it as easy as possible for them by giving them a word bank or multiple choice, instead of short answer. Don't give "idk" or "Nothing" as an option.
Here are some examples:

Fun Challenging Confusing Valuable
Circle the sentence that best describes how you felt most days in this class ---- I looked forward to it. I dreaded it.
If you chose "I looked forward to it," circle the reason why. You may choose more than one:
My friends were in it. The lessons were interesting. The classroom environment looked cool. English is my favorite subject. Teacher was enthusiastic. Teacher was entertaining.

None of my friends were in this class. The lessons were boring. The lessons were too confusing. The classroom environment was a mess. I've never really liked English class. Teacher didn't seem to care about us. Teacher was too uptight and we didn't ever feel comfortable.

One method I've had success with is asking, "What question should I ask about..." and then insert the topic of discussion. You might try phrasing a few that way. For example, "What question should I ask the class about finding nouns?" You might get your answer in a roundabout way.
Some people just can't stand giving feed back. Don't take it personally. Don't worry about it.
