I would choose based on what turns you on. If you’re into East Asian women, Tokyo, Seoul, Shanghai, Singapore, etc. if you’re into Slavic women, Poland, Baltic, or Balkan country. If you’re into Latin women, Argentina, Spain, or Brazil….etc etc
Go where you’ll be attracted to the people there. Everything else is easy to figure out.

Indonesia bc it’s challenging to see the country without the time. Spent 1 week in Borneo w the orangutans on a klotok, 1 week in Raja Ampat diving/beach,1 week in Komodo diving/beach on a chartered boat, 3 days in Java for temples (highly recommend the Amanjiwo splurge). If you don’t know how to dive, learn; it is one of the last places on earth with untouched reefs and is SO worth seeing.
With 60 days, I would add Sulawesi for a week, extend Java to a week then head to Cambodia and Thailand for more temples and incredible food
Personally, I’d go somewhere and have a bucket list type experience. Climb Mt Kilimanjaro or spend a month learning another language or doing a backpacking trip or something like that. Or id learn to cook in Paris or something - build some skill that would increase my happiness in addition to the experience abroad.

Depending what you mean by limited international travel - what do you like to/experience? Recently separated are you trying to party and bar hop or are you more into seeing sights/experiencing culture, etc
Would suggest balkans - backpack through Croatia, Albania, Greece - pretty affordable, easy, steady backpacking population and making plans a few days ahead of time shouldn’t be much of an issue

I would pick east Asia and go to Japan and Korea, Thailand, etc. Second choice: Europe, and I would hit up Poland, Lithuania, Latvia, Estonia and the Balkans. Before you get back into the real world, spend a few days at Hedonism II in Negril, Jamaica.
I would consider Vietnam, Thailand, Netherlands, the Balkans.
