Is it mean to feed my Midwestern American in-laws' kangaroo meat when they come to visit? ...Without telling them what it is first?

Roo meat is tasty and very healthy! Also why do you think it’s mean?
On a separate note, my boyfriend who is also in consulting who is originally from the mid-west, is moving to Sydney to live here in January.

Note, my wife and I are also American but have been living in Sydney for while now.

are your in-laws vegetarian/vegan ?

Kangaroo is nice. Great burgers

if they aren't vegetarian I wouldnt stress it OP

Put the shoe on the other foot. What if I fed you blood pudding or haggis and didn't tell you? How would you feel? If you cook the roo properly, so it's tender, then it's probably ok. Remember, very little fat on roo, so just chucking it on the barbie like a steak I find doesn't really work. Get a good recipe off the web.

Seeking advice: I’ve been working as an analyst at a PE company for 18months 4 days a week on a part time contract and I feel like they are under paying me. I’m earning 42.2K p.a They want me to go full time as I am graduating however I don’t know what the base salary for an analyst with 18 months experience would be. My friend who works as an analyst (with less experience than me) is earning 70K. Would love to get a sense of what I should be expecting / asking for when I go full time. Thanks!
