Generally, FAANG requires experience on distributed and scalable systems + good knowledge on DSA.
I assume model monitoring is just a monitoring work and tuning the built models.
With that, I would say you face better challenges and more exposure to those in a developer role which is good in terms of your career goals.
Machine learning is in demand right now, if you think you can get into model development that's really good.
