I just did that! Depends on your hours. I took time off. Totally worth it. I spent 3 nights in each. Could’ve been more for sure. My SO was working part time and we managed him having calls in the AM and then hiking starting around 1p (which would be 3p ET). He took some days off though.
What time of year? Assuming the summer where you have full daylight hours, that would be best. Many of the longer Zion hikes are best started in the morning where you end early afternoon. The best hikes (angels landing, canyon overlook, observation point, the narrows) require multiple hours and should not be started too late - you’ll run into too many other people and it ruins things. Same goes for Bryce. For Grand Canyon, it depends whether you plan to hike into the canyon - you’ll obviously want more daylight.
If you can be flexible and work in the late afternoon / early evening then it would be fine.
I would not do this in the fall or winter. Not worth it.
I did it in January. Was awesome. We had the whole place for ourselves :-)

Bryce and Zion are a beautiful place for cycling when it warms up! And the hiking is great too. I’d do 5 nights just in Utah. Another 2-3 at the GC.
