What counts as YOE? internships? How about start up or entrepreneurship experience?

In your same position and I’m currently doing part time MBA. I think we’re too junior for EMBA. In terms of part time vs full, I’d look at what your goals are and your financial situation. Can you afford the two year break? Are you trying to pivot into consulting, PE or IB? If the answer to both is yes, then go full time. If you’re not trying to pivot, you’ll probably be fine with part time, just go somewhere good.

Where are you located? do you have a local program that would allow you to work and study simultaneously? or would you need to travel?
5 years is on the very low end for EMBA. Typically they want to see 10, sometimes you can get away with 8.
The one exception is CBS EMBA which is really a misnomer. It is a part-time program with student who have 4 to 20+ years of WE. If you are in NYC, that might be a great option. They have a Friday/Saturday option and a Saturday only option.
I’m finishing an M7 EMBA. I’m just below 10 YOE and I’m in the bottom quintile in terms of experience, if that matters. The difference between a PT MBA and EMBA is marginal - I would have probably done PT if the format made sense.
If I were you, I would do an opportunity cost assessment to figure out what you’d walk away from if you went FT. Use that as a baseline.
