Know anyone you worked with who has left EY? I only used references outside of my current job
You can ask the firm if it is OK to give references after receiving an offer. That is pretty standered when moving from the first job out of school
Project teammates? Any friends from school? I would think it's strange if you've worked at EY for more than a few months but had no references from EY.
Look most of your managers are prob thinking about quitting anyways. Trust one enough not to rat you out? I’ve always used that one manager who DGAF or someone else who quit before me.

Just tell the new place you are happy to provide but they can’t contact them unless a offer is on the table so as to not jeopardize your current job…

I used someone who had left the firm who was my senior, a friend from college who I worked with closely in extracurriculars, and someone from my own start class that had already left.
Why not just be open with your coworkers about the fact that you are considering leaving? You are absolutely not going to get fired in this environment or any other, and you might engage in real talk about why you want to leave. Could lead to changes that give you more options.
