My opinion: pacing should be constant throughout. You should speak slow enough that the interviewer can process your words and fast enough that they don't fall asleep waiting for the next word. This gives the interviewer a chance to interject, you a chance to think while speaking, and prevents the interviewer from being thrown off when you shift to ludicrous mode.
When in doubt go slower. You give yourself more time to think, you show better communication skills, and most of all you don’t blurt out something. A big flag is if an interviewer has doubts about putting you in front of a client because of concerns that you speak before thinking.
The cases aren’t that long and if you’re well prepared you’ll finish early anyway without trying to rush.
Don’t over think it.
Be personable, be engaging, and where relevant - top down communication.
