For France, lots of options depending on how far from Paris you want to go. If close(ish) to Paris, I suggest in order of distance (1) champagne (day trip is feasible but I suggest an o/n in a cute b&b - we stayed at chateau du Saulsoy); (2) burgundy with a stop over in Fontainebleau for history: (3) Normandy and Mont St. Michele but it’s for history and no vineyards. For vineyards do check ahead for opening times as Nov is not really the season as far as I know. Lastly, I know you want to do Bonvoy but if you have a chance do look into staying in a chateau as it is extremely charming (I suggest the chain - Relais & Chateaux)
Champagne area - Reims - is just a 40 minute train ride from Paris. Can schedule tours with the different houses there to tour their cellars or go to the vineyards. Normandy can be done on a day trip from Paris by tour bus or car. Tons of Bonvoy options in Paris.
If you’re getting out further from Paris, Provence is great and has some Bonvoy options in the area. Great wine down there and plenty of history close by like Avignon.
