Love tofu! All types of tofu. Silken tofu is amazing for making desserts like mousse and cake if you're someone who loves incorporating some dessert in your diet.
I eat a lot of high protein greek yogurt and probiotic cottage cheese. If you do eggs, obviously eggs are great too. I have found that a high protein/high fiber diet is best for my gut health so eating vegetarian doesn't really work well for me (in my experience meat is rarely an issue for your gut, it's all the carbs and processed foods that negatively impact gut health)
High protein is easier, but here are my tips for high fiber: raspberries (or blackberries) are literally so much higher in fiber than most fruits; chia seeds; green peas; broccoli; potatoes with skins (eating the skins on anything you can); and then obviously beans and lentils!
I agree with the first comment. Tofu is such a versatile food because it literally takes on the flavor of whatever you cook it with so its really easy to eat as long as you don't mind the texture of it.
