Definitely any type of beans. Most beans are packed with micro nutrients and are great for you. I often add beans to my salads just to get a extra kick on top of eating chicken

Plain Non Fat Greek Yogurt. A lot you can do with it, and it’s a great substitute for sour cream.

Not great beef. I feel like bad beef can be worked with and turned into something great.
I also had a friend who said a pan fried steak at home could not compete with a restaurant steak. I enjoyed proving him wrong.

Venison
Spinach. It’s a nice addition to any types of meals.
Chickpeas! You can do so much with them! Salads, burrito bowls, hummus, falafel, soup, etc. I even make chickpea brownies. Also, they contain a ton of essential amino acids.

In the US, I wish lamb, mutton, and goat were easier to find and less expensive. Elk and deer, too, but I appreciate that you have to hunt to get those and not everyone is willing/able to do that.

Big fan of carrots personally
Carrot fries are delicious. Cur the carrots into fry shapes. Put on baking sheet with parchment. Season with course salt, olive oil and a smattering of crushed rosemary. Roast at a high temp until slightly browned around the edges. If you have parsnips, add them to the carrots. Delish.

Casein, if you add whey to any baked goods casein is an instant level up
I tried elk's ribs and they were the best ribs I ever had.
