All three are crazy versatile. To me, this question is like asking which car is most reliable: a Honda or a Toyota.
I have one of those Philips pasta extruders, so I love using that. I’m a fan of potatoes. And I personally believe that basmati rice can go with pretty much anything. Love all three.

Potatoes for sure!! Endless ways to use them!
Potatoes are probably the most versatile… I do enjoy them. And I love pasta, real homemade pasta is best but that takes too much time. Rice is quick and easy we eat it often, I’m not very experienced in many different ways to use it though.
How do you all use rice?
All are versatile but I am going to give rice the win because it can do sweet best e.g., rice pudding, sticky rice.
That said, potatoes do breakfast more than the other 2 (at least in western diets) but rice can also do breakfast.
Pasta is the clear loser in versatility.
Potatoes, because you can make them so many ways.
Rice and potatoes equally imo.
