You can always ask, but if they need to fill an immediate need / are shorthanded they’re going to want a commitment, and it may turn them off
The good news is you can always take the full time role and then leave after 3 months if you find something better.
I know with the big holding companies they have separate budgets for freelance and perm, and the perm budgets are basically use it or lose it, so they may say no for that reason.

Could be that they were offended, or it could be that theyre just interviewing the rest of the people they had lined up.

Honestly the question doesn’t really make sense. You could take the full time and they could still let you go after 3 months. I would not be offended but I would wonder if I want to invest any more time in you, or maybe I’d think you’re shady and just trying to get a long term freelance gig.
You could always take a full-time job and quit if it’s not a good fit
There’s no advantage to taking a permalance role unless they’re going to pay you more. Why earn the same money with no benefits? You can always leave whenever you want - it doesn’t matter if you’re freelance or FTE.
